Hot Cross Buns

More snow and extremely cold! A busy day catching up with family, but still time to pop a simply dressed chicken into the oven, perched on carrots, onion, celery and sage with a low bath of water. The chicken was seasoned and drizzled with oil, before protecting the breast with four strips of pancetta. Simple but delicious and great gravy!

Whilst the chicken is cooking, I think about Easter and making some hot cross buns. R told me about some with orange and chocolate - my favourite two things when they are together! I find a basic recipe from an old Good Housekeeping recipe book, and set about adapting it for me. This will be my trial run before the weekend holiday...

Citrus and Chocolate Hot Cross Buns

12 oz strong plain flour
1 sachet dry yeast (7g)
1 tsp salt
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp grated nutmeg
1 oz caster sugar
2 oz sultanas (should be currants, but they are not in stock in my house today)
2 oz chocolate chips
2 oz chopped citrus peel

1 egg beaten
6 fl oz warm milk
2 oz butter.

Mix together the dry ingredients. 
In a saucepan, warm the milk adding the butter to melt into it. Allow to cool if it gets too hot. Hand warm is what you need. 
Beat the egg.

Either by hand, or with a mixer, mix in the liquid ingredients to form a dough. Knead this for a good 8-10 mins by hand, or 5 mins with a dough hook on your mixer.
Transfer to a clean, oiled bowl and leave to double in size - this will take up to an hour.

When risen, knock back, tip out of the bowl and knead again for 2-3 mins. Cut the dough into 12 pieces, and re-form these into bun shapes.
Place the buns onto a baking tray, lined with baking paper, and leave again to double in size (half an hour).
Heat oven to 190 C. When ready, place the buns into the oven for 15 mins. Test them by knocking on the bottom - they should sound hollow.

Well, good feedback from R and H :-) I think a little more adaptation might be good... perhaps more chocolate??!! Who knows how they will develop by the end of the week ;-)
