Bacon and Mushroom Puffs
It is so good to have someone on the same wavelength as you when you cook. On the way home from picking H up from work yesterday, we 'developed' our supper! It started with a "what shall we have for dinner?" conversation, and then ended with a new recipe to try - now that's what I call team work! So, from a few store cupboard ingredients, we have...
Bacon and Mushroom Puffs (makes 2)
1/2 large onion, sliced
4 rashers of back bacon, snipped into small pieces
8 small button mushrooms, halved
1/2 pack puff pastry
2 tsp cream cheese
1 egg, beaten
Heat some oil in a pan and fry the onions over a low heat for up to 10 mins, or until they are very soft, with a melt in the mouth sweetness.
Add the bacon pieces and fry for 2-3 minutes on a high heat, and then add the mushrooms for a further 2-3 mins.
Meanwhile, take half the pastry, and roll out roughly into a square:
Using the beaten egg, paint a centre square for the filling to sit on, and also brush around the edges.
Pile up half the filling in the centre of the pastry, add a tsp of cream cheese and then take a corner of the pastry square and fold each over the filling.


Finally, you will have a little parcel. Brush the whole parcel with beaten egg after placing on an oiled baking tray. Make another one the same and then bake in the oven at 200 C for 25 mins, when they will be golden and puffed up with pride! (one of ours was standing up with pride yesterday!)
