Russian Roulette Revel-ations
Where did the tradition of taking cakes to work for your birthday start? It always means a good supply if you work somewhere with a large team of staff, and is great for a bit of an experiment!
This year my inspiration came from a trip to the cinema earlier in the week. For a while the unfinished bag of Revels sat on the side. I had to do something with them - then the idea came. Often people I know have a Revel they can't stand. Unfortunately for the coffee cream centre, it is usually that one! A fun game of Russian Roulette is played every time you dip into a bag of Revels!!
So what if you put them in a muffin? Hidden within the lightness of the soft cake mixture, there would sit a secret treat - a centre without the chocolate coating that would melt into the cake.
I used an old favourite recipe and added cocoa powder. Bananas went in too - can't waste old bananas!!
Russian Roulette Revel-ation Muffins
3 tbsp good quality cocoa powder
4 tbsp boiling water
Mix these together until smooth, then leave to cool.
250g flour
100g caster sugar
1/2 tsp bicarbonate of soda
1 tsp baking powder
Mix these dry ingredients.
125ml sunflower oil
2 large eggs
Whisk these together before adding the cooled cocoa mixture.
3 very ripe bananas, mashed.
1 bag of Revels. Use 1 Revel for every muffin you make. I made 24 mini muffins, and 8 normal sized ones.
Add the liquid ingredients to the dry, along with the bananas. Mix well, but don't worry if it is not perfect (those are the best muffins!). Divide the mix into the muffin cases and push a Revel gently into the centre of the mix. I topped any that stuck out too much with a little bit of mixture.
Bake at 200 C for 20-25 mins for normal sized muffins, or 15-20 for mini muffins.
Have fun and watch out for that coffee one! ;-)
