Sunshine eating and produce harvesting

Once again, the vegetable patch has come up trumps...

A roast dinner with ALL veggies from the garden!

It managed to feed three of us, and how good it tasted!
Meanwhile, the beetroot have done well, and I found one turnip ready to pull for another meal...


Roasted beetroot (drizzled with olive oil) makes a great side dish!

The hot weather seems to be hanging around for a while, and we are taking every opportunity to cook and eat outside. Burgers are easy to make and this week's version had an italian theme:

450g minced beef
3 shallots, finely chopped (see below)
2 garlic cloves, finely chopped
6 sundried tomatoes, finely chopped
A small handful of fresh basil leaves, finely chopped
Salt and pepper.
1 slice of stale bread, whizzed into breadcrumbs
1 beaten egg

Whizz up the breadcrumbs in a food processor and add to the meat in a large bowl.
Place the shallots, garlic, tomatoes and basil in the processor and chop finely.
Add these to the meat mix, along with the seasoning and egg.
Use you hands to mix the ingredients together well, and then form the mixture into tennis ball-sized patties, gently pushing to flatten slightly.
Barbecue when you are ready!

I don't think H could put much else in her burger bun, but the burger just about fitted! ;-)



As you can see, the pineapple is a definite fixture on our barbecue menu, and we can now add sweetcorn too. I did nothing but pop it on - no oil, butter or foil. It was so sweet and deliciously caramelised!

Lastly, just a note of a drink we tried this week. Rekorderlig - a great little cider (yes, ok, a bit girly looking, but a really raspberry flavour!). If you get a chance to try it, do.
