What a month!

Phew!! Thank heavens for cooking and understanding what you can do with ingredients.   It's been a wake up call for many as we are confined to our homes and scrabble around at the back if your cupboards because you can't get anything in the shops... I've really enjoyed it!  I'm using up ingredients I froze or stored with a view to using (but never did!). I've researched some ingredients to see how I could use them and to be honest, we haven't eaten this well for ages!!  As you may or may not know, Cabbages and Custard has become a cookery file that I add to now and again. It was useful to my daughter at university and I dip in now and again. It's my own personal cookery book!  Given the isolation, I'm back sharing my recipe finds and also my "make it up as you go along" makes! :)  One week in we have eaten: Griddled mustard mackerel with baked cauliflower. Open fajitas with homemade tortilla wraps, hummus and avocado salsa. Herby chicken korma ...
