In need of energy?

In need of a boost during the dark, dull days of January, I pulled out my copy of Deliciously Ella to get some inspiration for raw energy bars. Ella makes energy balls, but I wanted to make bars to replicate the bars I have been buying at great expense for R.
Yes, I know the cost of ingredients is itself costly - that's why raw bar makers charge what they do, but it's so much more satisfying to make them yourself 😊
So, out came the KitchenAid...
I used Emma's method but used what I had in the cupboard. I have made these before with whatever I had then, so here goes...
First, nuts... flaked almonds, walnuts and cashews. Straight into mixer to be chopped. About a mug-ful. Chop fairly finely before adding the rest of the ingredients.
Dried fruit... a mix of currants, ready chopped dates and some crystallised ginger that was lurking. Thought that might give it a bit more taste. Like a bit of fiery ginger to spice things up. I used about 350g, but up to 400g is fine.
Finally, 4 tbsp cacao, 2 tbsp peanut butter (or any other butter you prefer), 2 tbsp coconut oil (pop it in hard, it will blend fine) and 2 tbsp chai seeds
Turn on and mix all the ingredients together well. Add a couple of tbsp of water as it mixes. Keep going until it comes together in a big ball.
Line a deep baking tin (I use a square 9" tin) with greaseproof paper. Tip out the bar mix and using a metal spoon, spread the mixture into the base of the tin...
Place the tin in the fridge for at least an hour before marking and cutting your bars and wrapping in greaseproof. Store in the fridge until needed for a little boost!
