It's holiday time for us, so apologies for the short post! It's been a wonderful few days in Suffolk. I've never ventured this way before and what a beautiful place I've missed! Definitely worth a visit if you want to get away from it all and immerse yourself in nature. It's isolated, it's quiet at this time of year, it's perfect for switching off. Bliss!
My preparations for this trip were much better than before. Having Meg meant I didn't want to have to pop to the shops to get stuff once I arrived. I had to be organised. So in preparation, I made my Chicken in Red Wine, some simple sweet potato and squash soup, Bara Brith my way and finally carrot and Walnut muffins using the Mary Berry recipe but halving it and then using muffin cases.
Pop in the oven for 15 - 20 mins at 200°C/ 180°C fan. Done!
I topped mine later with the icing I made and had left over.
So preparations done, it's time to enjoy the break without having to worry about meals. There's plenty of food here to make things with... pasta, pasta sauce, chicken thighs, salad, potatoes and sausages. Perfect!
