Chicken and Medley of Mushroom Risotto

What a week! Where has my cooking time disappeared to?! Luckily I have a lovely husband who looks after me when the days get longer and longer at work, and I haven't had to cook - but I miss it!

With this in mind, I am determined to do something tonight. I'd planned a risotto - Chicken and Medley of Mushroom Risotto. A simple but delicious rice meal and a comforting, stress-free time stirring the creamy mixture. Time to think... Time to reflect...

Chicken and Medley of Mushroom Risotto

1 pint hot stock (including the water from the porcini) - I used chicken tonight, but vegetable stock is just as good. 
1 oz butter
Olive oil
1 small onion diced
300g diced chicken breast
1/2 punnet closed cup mushrooms, sliced
large handful oyster mushrooms, ripped
small handful (about 10g) dried porcini mushrooms, soaked, drained and sliced (keep the water you soaked them in!)
300g risotto rice

Heat the stock, or like me, dissolve a good stock cube in boiling water and the water drained from the mushrooms.
Melt the butter into the oil and then add the onions, stirring until soft.
Add the chicken and brown gently in the buttery oil.
Tip in the closed cup mushrooms, stirring to allow them to get covered in the buttery juices. Cook for about 3 mins.
Add the oyster mushrooms and cook for a further 2 mins.
Now is time to add the rice. Pour it in and stir to get it started cooking as it hits the heat of the pan. Cook for about 1 min before you add a ladle-ful of stock.
Stir gently, and as the liquid disappears, add your next ladle of stock.
Continue this way and about half way through pop in your porcini mushrooms.
Once you have used the stock, your rice is plump and there is a creamy 'sauce' that covers your ingredients, you know you are ready. Mmmmm.....
Serve with slithers of Parmesan cheese scattered on top.

I feel rested now, and ready to face an easier evening. It's been a warm but wet day, and it allows for more time to sit in the garden - always the best way to relax! I hope the sun is shining where you are too! :-)
