Our bay tree has decided that it is time to flower and is determined to put on an amazing show! It has flowered before, but perhaps it is the weather that has caused a plethora of buds. The same seems to be happening around the county, as was reported on the TV last night, where a fruit grower had apples, pears and cherries all blossoming at the same time! Well, I will have plenty of bay leaves to gather and use this year. Fresh bay has a distinctive flavour, and I will need to do some experimenting and investigating to see how it can be used.

Tonight I wanted to use the spiced pastry I made yesterday. I made a normal shortcrust pastry, but stirred in 1 tsp turmeric for colour, as well as flavour, and 1 tsp cumin before adding the water. I like to make a quiche that R and H can use for their packed lunches when I can, and this was a perfect excuse to do that. I had chicken left over from a roasted bird we ate cold with salad yesterday, and some fresh ham and cheese. Red Leicester would compliment the golden pastry and would melt slowly, but stay in colourful 'dots'. What a treat for lunch!
