Chocolate Pizza
I was very jealous to hear that a colleague has just secured a job in Tuscany - lucky thing! Having made muffins yesterday for breakfast at our day-long planning meeting, and being given the responsibility to bring along 'desert' for our buffet lunch I felt I needed to bring along something to celebrate her move. The only Italian things I could think of immediately were pizza and pasta. Neither could be a desert - or could they? How about a chocolate pizza? So I set about experimenting...
Chocolate Pizza
6oz plain flour
1/2 oz cocoa powder
1/2 oz icing sugar
1 packet dried yeast
1 tbsp corn oil
4-5 fl oz warm water.
3 tbsp chocolate hazelnut spread (Nutella is good!)
2-3 oz chocolate chips
Additional sugar sprinkles/stars to add colour.
Sieve the flour, cocoa and sugar into a bowl, and then stir in the yeast.
Make a well in the centre of the dry ingredients and pour in the oil.
Begin to stir the oil in, and at the same time, gradually add the water until you have a soft pliable dough.
Tip out the dough and knead for up to 5 mins.
Place back in the bowl, cover with cling film and place in a warm place until doubled in size (about 30 mins).
Once doubled, knock the dough back, and then tip out and knead again for two minutes.
Begin to shape your pizza base by stretching and pulling the dough gently. You can use a rolling pin to to help you with this.
Place the pizza on an oiled baking tray and place into a hot oven (220 C) for 6 mins. If the dough rises in the middle, don't worry, just gently press it down while hot with a dry teatowel.
Spread the base with chocolate spread, which will melt to a spreadable consistency.
Shake on the chocolate chips evenly.
Place back in the oven for 2 mins.
Sprinkle on the sugar stars, or whatever you have chosen, and then leave to cool.
