Leeds Castle, followed by Spaghetti Carbonara
A day at the "loveliest castle in the world" yesterday with fast cars...
...and beautiful black swans, first bought to the castle by Lady Baillee after she bought the castle in 1926...
...followed by catching up with friends and a great meal out, has meant that the weekend's baking and shopping regime has been placed lovingly to one side. However, it also meant a quick meal for H yesterday evening. So, something of a favourite that hasn't been made for ages -
Spaghetti Carbonara
Cook spaghetti for one.
Fry some chopped bacon or pancetti cubetti until crispy.
Tonight I cooked baby button mushrooms, halved, with the bacon.
When the spaghetti is cooked, drain and stir in 3-4 tbsp creme fraiche and the bacon.
Grate some cheese of choice into the pan. H likes Parmesan, but tonight I used some Pecorino I had instead. Similar salty taste.
Break an egg into the spaghetti and stir in.
Serve into a warm bowl and season with black pepper.
