Crispy topped Mushroom Chicken

Talking about putting my feet up spurred me on to make some banana, walnut and chocolate chip muffins last night. The walnuts added just a little bit extra to my normal mix and half have been devoured already!

Tonight, R had requested something based on chicken and mushrooms, so I came up with Crispy topped Mushroom Chicken:

2 chicken breast fillets
3 large mushrooms
1 tsp dried herbs
2 tblsp cream cheese
large handful breadcrumbs

Chop the mushrooms very finely and fry in olive oil with the dried herbs for 3-4 mins. Allow this to cool fully.
Once cool, stir them into the cream cheese (I used a garlic and herb version, which worked well).
Place the chicken into a dish and spread the mushroom mixture onto the top. 
Cover the mixture with the breadcrumbs, pressing gently to help it 'stick'.

Cook in the oven for 35-40 mins, or until the breadcrumbs are golden and the chicken is cooked through.
