Three Fish Pizza

Pizza is always an easy meal, served with salad it is a complete meal. I always prefer to make my own bases so that I know what is in them and also because they are so easy to do! I also enjoy shopping for toppings, however my favourite has to be fish - an unusual choice and one that you don't see on the supermarket shelf, but one we have had many times over the years.

It has been a while since I made pizza dough, however I remember the recipe (luckily!), so it is a quick make!

Pizza dough

8 oz plain flour
1 sachet dry yeast
pinch salt
1 tsp sugar
1 tbsp olive oil
5 fl oz warm water.

Mix the dry ingredients before adding the oil and, gradually, water, until you have a soft and slightly wet dough. Knead the dough for up to 5 mins, and then place in a bowl, cover and leave somewhere warm until the dough has doubled in size.
After this time, knock the dough back and knead again, reshaping to the circle, square or, in my case, rectangle of your pizza. I oiled a baking tin and placed the pizza in the tin. It was covered with food wrap and placed in the fridge until ready to top.

'Three Fish' Pizza Topping:

Use passata or a good quality tomato sauce to spread lightly over the pizza. Rip a mozzarella ball into pieces and dot around the top. 
Drain a small tin of tuna thoroughly, flake and add. 
Mash a tin of pilchards in tomato sauce and dot around the pizza too.
Grate 1-2 oz cheddar cheese over the top of the fish and finally add 10-12 cooked tiger prawns as your final garnish.

Bake at 210 C for 15 mins.
