Just a quick post tonight. With dinner made, I didn't do much else except a lovely fresh salsa. I normally make an avocado salsa using avocado diced, finely chopped red onion, chopped fresh coriander and a squeeze of lime juice from half a lime. Yesterday I misjudged the avocado I bought for today, and chose one that wasn't near to being ripe. So, back to the banana bowl it went for a helping hand - perhaps an avocado salad for lunch tomorrow... Plunging back into the fridge, I found a nice fennel bulb and considered how this might taste with the other ingredients. Well, I had to give it a go!
Fennel finely diced with the onion, coriander and lime was fresh and perfect for the thick meat sauce of the chilli. Not something I would have thought of if I hadn't had the fennel in the fridge, but fennel seems to be one of my favourite ingredients of the moment and I have now discovered another use for it :-)
We love our Chilli with lots of trimmings, so not just salsa, but also sour cream, plain tortilla chips, grated cheese and a small portion of rice. Lots of flavours, so you need to get it right, not too much spice and just enough sour but sweet lime.
