Baked Onions

Hurray! A good start to the week - no work to do at home tonight other than check a few emails. A perfect chance to get cooking and try using Sophie Dahl's Baked Onion recipe (Delicious Miss Dahl), of course with a few tweaks!

Baked Onions (for three)

3 large white onions
100ml sour cream
50 ml natural yoghurt
50g parmesan/pecorino/red leicester, grated.

Peel the onions, leaving them whole, and place in a pan, covered in water. Bring to the boil and cook for 20 mins at a strong simmer.
Pre-heat the oven to 180 C.
Mix together the cream and yoghurt.
Drain the onions and carefully halve. Place in an ovenproof dish.
Season the onions with plenty of pepper and a good grind of salt.
Pour the cream and yoghurt over the onions, and follow by sprinkling the grated cheese.
Pop into the hot oven and cook for 30-40 mins, when the cheese is bubbly and deliciously golden.

Red Leicester added a lovely effect!

We had our onions with salmon, seasoned and sprinkled generously with lemon juice, fried gently for 10 mins, turning once, but allowing to crisp gently on each side. We had steamed broccoli on the side. YUM!
