Easy Does It Frittata

So, what do you make when you get home from work on a hot day, when you have entertained 20 eleven year olds all day, and you have been up since 4am because your child is off on a school trip at 5.30?!!

Well, I can tell you - it's going to be simple and not involve much prep!

Into the fridge I reach and pull out bits and bobs...

1 pack of Cubetti di pancetta
3 spring onions to slice
half a pack of fine green beans to chop
A handful of grated cheese (a prepared pack that I bought reduced - not what I would normally use. It now needs eating)
6 eggs
8 baby sweetcorn to chop
and 4 new potatoes that were left from the barbecue. These I will slice.

Easy Does It Frittata

Turn the grill on to a high setting.
Beat the eggs with 2 tbsp milk, and sprinkle in some mixed herbs. Beat again.
Heat a dry pan (my pan is 28cm wide) suitable for putting under a hot grill to finish the dish. 
Fry the pancetta to release the fat, then add the vegetables.
Once these are done to your taste, pour over the egg mixture.
Gently shake the pan a little, and push the vegetables into the egg if needed.
Allow the egg to cook underneath
Sprinkle the grated cheese onto the top of the frittata, and then place under the hot grill.
Cook for 5-10 mins, or until golden on top, and slightly shrunken away from the edges of the pan.
Serve onto a plate and cut into slices, to eat with salad, or with the time saving option of good ol' baked beans and ketchup! Yum :-)
