Carrots and hummus dip

Mae had a point…however, fresh carrots from the garden are like gold and should be savoured quickly! This little bunch of treasure came from Grandad’s garden – thank you Grandad!



 Carrots this fresh don't need topping and tailing, and I thought they needed a little something... Fresh hummus is perfect for dipping their golden toes into.

I made a reduced amount as there was only two of us, but there was still plenty left over!

1/2 400g can chickpeas
Juice of 1 lemon
1 small clove garlic, crushed
2 tbsp tahini paste
2-3 tbsp olive oil

Place all the ingredients in a food processor, or like me a jug, and whizz together until smooth. I used a hand blender (I usually use it for soup) and it worked just fine. You can blend to the smoothness of choice - I like a little roughness in my hummus so that it feels homemade! Easy to do and great to eat...

Hummus, fresh carrots and ginger cordial - yum!
