Barbecue weather!
Oh, I do like to be beside the seaside,
Oh, I do like to be beside the sea...
Oh I do like to live beside the seaside! Especially with temperatures soaring and the smug delight of not having to sit in a queue on the roads in and around the area, as the world and his wife head towards the sparkle of sunshine reflecting off the water. A short stroll from the seafront means we are able to make last minute decisions about whether we entertain the idea of being at the beach or not.
This weekend was a 'not'. Not because it was teaming with people (although that does put me right off!), but because the garden is a haven and the cool breeze blowing inland made it not worth going out.
It was barbecue weekend, so all brushed down and ready to go, the fire pit was lit. Tasty, fat sausages were thrown on, alongside thick, juicy beefburgers. In our preparation, Mr. Sainsbury was very helpful and provided the meat this time, although burgers are easy and need to be made next time.
However, it meant I could turn my attention to the 'sides'...
Into a hot oven went washed (don't scrub the skin off!) new potatoes. Bake at 180 C for 20 mins before sprinkling with olive oil and a smattering of sea salt. Pop back in the oven for a further 20 mins.
A visit to the veggie shop, meant I had lovely fresh white cabbage and carrots with tops still on. My plan was to make a coleslaw -
Quick Fragrant Coleslaw.
2 carrots, grated
Large handful finely sliced white cabbage
3 large round radishes
2 heaped tbsp mayonnaise
1 tsp dijon mustard
1 tsp ground cumin
2 tbsp pumpkin seeds
Mix the carrot, cabbage and radish.
Add the mayonnaise, mustard and cumin.
Stir to combine thoroughly
Add the seeds and mix in.
Add onion or fresh chives if you are in the mood. Whatever you fancy goes!

First 'barbie' of the season! |
Along with a fresh sliced Rosso Lollo heart, and some balsamic and basil tomatoes (Place sliced tomatoes on a plate. Sprinkle with balsamic vinegar and a pinch of sea salt. Top with freshly picked basil leaves. Leave to warm in the sun and take in the flavours.) it was nice lunch in the sunshine. Roll on next weekend!
