Banana and walnut cake
It's time to think of something else to bake other than banana muffins when I have some old bananas to use up. Banana cake is the next best option and something I could try in my new square baking tray I bought reduced in the local supermarket. A nice heavy tin that has the potential to last a long time - perfect!
Banana and Walnut Cake
150g plain flour
2 tsp baking powder
1 tsp ground cinnamon
50g porridge oats
80g walnut pieces
50g oatmeal
2 over-ripe bananas
2 eggs, beaten
100g butter
200g caster sugar
2 tbsp honey
Sieve the flour, baking powder and cinnamon.
Mix in the oats, walnuts and oatmeal.
Mash the bananas and mix with the eggs.
Place the butter, sugar and honey in a saucepan and heat gently until the sugar has dissolved and the butter has melted.
Leave the butter mix to cool slightly.
Stir in the banana mix when ready, and then pour the liquid ingredients into the flour mix.
Pour the cake mix into the buttered tin and bake for 50 mins at 180 C.
Once baked and cooled, I sliced it into small squares (double bite-sized!). Why I did this, I will never know - they just eat two!! ;-)
