Sweet barbecue marinade
I had a change of plan for yesterday's menu, and just as well. It ended up with just the two 'boys' eating, so instead of making curry for two, I decided to shift the Indian to tonight and let R & T have something else.
I had bought a couple of extra chicken breast fillets from the local butcher (always worth freezing some if I can) and thought about breadcrumb-ing them to serve with salad and roasted new potatoes. But suddenly, I remembered having a recipe from my brother-in-law many, many years ago, for barbecue chicken. Although I can see the scribbled piece of paper in my mind's eye, I have no idea where it is tucked away... I know it starts with tomato ketchup, so I begin there and start to build what I think will be a barbecue style marinade for my chicken.
Sweet Barbecue Marinade
2-3 tbsp tomato ketchup
1 tbsp balsamic vinegar
1 tsp sea salt
1 tsp brown sugar
1 tbsp honey
splash (about 1/2 tbsp) of soy sauce.
Grind of black pepper
Stir all the ingredients together, and pop in your chicken. Stir well to cover with the marinade and then cover with clingfilm and place in the fridge for 2 hours.
When ready to cook, place into a hot oven (200 C), grill, or throw onto the barbecue if you are lucky with the weather.
Talking of weather, it has been a wonderful summer so far. A mixture of hot days followed by stormy nights or wet days - quite tropical! Tonight, though, I realised how dark it is getting by 9pm. Not so long ago, we were eating/drinking outside at 10 pm, with the light just diminishing. Not now. I'm closing the curtains at 9! I suppose it is six weeks since the longest day. I hope the days don't disappear on us too quickly, there is still so much summer to plan, and so many things to do!
