Tilapia

I'm always open to trying something new, and when faced with a great bargain at the supermarket, it was time for me to try Tilapia. The fish was filleted and two fillets cost me 99p, instead of the usual £3.95!

I scampered home and 'Googled' the fish to see where it was fished and what it looked like whole...

I was surprised to find they are found in all sorts of places around the globe, and that they are considered an invasive species - well, that makes you feel a little bit better about eating them! I understand they are commonly eaten in America, but it is not a fish I have seen over here, although I have heard of them. More information followed, and, although it wasn't clear on the packet, the farmed fish can have high levels of Omega 6 and are therefore not a healthy option like their wild cousins. Omega 6 can be detrimental to people with certain health conditions.

Despite the health warning, and only presuming the fish I had bought was farmed, I thought a one-off meal would not have me suffering. They needed to be cook straight away to keep the final freshness, and I wanted to keep it simple.

I dipped the fillets in seasoned flour, and then fried them for about 4 mins on each side. I served them with shredded little gem lettuce, dressed with an orange juice and hazelnut oil dressing and, of course, some chips! As a final flourish, I added a handful of pine nuts and a sprinkle of flaked almonds to the frying pan for a couple of minutes as the fish was cooking. These I scattered over the salad.

Voila! Simple, tasty (yes, it was good! Firm and meaty, with a similarity to cod or haddock in texture) and very easy to cook.
