Bread and Fresh Apple Coleslaw

I love my bread. Since blogging, I have tried hard to make a loaf every week, and it is such a treat. Today, after using the last few slices of this week's bounty, I found myself saying that I will try to make two loaves each weekend, freezing one to defrost later in the week. The reason behind this comment was purely because there really is no substitute for the real thing! Even though I buy good quality sliced bread (for the convenience to pop in the toaster when in a rush), it doesn't compare to my lovingly kneaded offerings. H would agree, and commented today on the toasted sandwich we had, which bought alive the three day old loaf. Cheese and Pickle Toastie goes down well in our house, topped only with a Tuna Melt Toastie, in fact. Tuna Melt contains tinned tuna, mixed with a little mayo, and topped with finely grated cheese - Mmmmm!!
So, from now on, it's homemade bread all the way - busy weekends ahead! ;-)

The toastie needed a little something to go with it, and we usually have some coleslaw tucked in the fridge. But not today. However, a white cabbage, a carrot, a parsnip and an apple later, and I have whipped up a sweet, fresh homemade slaw, which accompanied the toastie perfectly.

Fresh Apple Coleslaw

1/4 white cabbage, very finely sliced
1 carrot, grated
1/2 large, peeled parsnip, grated
1 apple (with skin on), grated
1 tbsp mayonnaise
1 tbsp apple verjus (use a dash of apple juice if you can't get this)
1 tbsp light olive oil
1 tsp ground allspice 
A good grind of black pepper
A handful of pumpkin seeds

Mix everything together and serve.
