Quick Blackberry Compote
A quick blog before I head down to the West Country for a few days and sample the delights that Devon and Cornwall have in store for me. Back to my 'homeland' to visit friends - a wonderful way to spend some time :-)
R and I went scrumping yesterday, well as far as our arms could reach over the fence of the deserted house behind ours! The blackberries are coming and there is nothing better than going out picking, and coming home with tubs of glistening berries and plenty of scratches on your arms. Our ex-neighbour's home is already feeding many a baby blackbird and thrush, but we were looking enviously at the rich pickings and longing to share it with them. A ladder and a broomstick later, and we had enough for a very quick blackberry compote to pour over ice cream (this is our favourite way to eat blackberries, other than fresh from the bush):
Quick Blackberry Compote
2 tblsp sugar
2 tbsp blackberry or raspberry liqueur
2 large handfuls of blackberries ( we had about double what you can see in the photo above).
In a saucepan, gently heat the sugar with the liqueur.
Add the blackberries once the sugar has almost dissolved.
Cook for about 2-3 mins otherwise the blackberries will begin to break up.
Serve immediately, or pour into sterilised jars, cool and refrigerate for up to a week.
